Job Description:
- Designing, developing and executing experimental protocols with goals of delivering new sources of compounds like proteins or sugar substitutes and extracting flavours by analysing the chemistry of ingredients to develop and improve food and beverages as per global standards.
- Understanding on popular flavour from vendors
- Creating the concept, enrolling with the co-investigators, experimental design, data analysis and interpretation.
- Application of flavours (evaluation, tasting, sensory scores, organoleptic and consumer preference tests etc)
- Providing an understanding of compound stability, shelf-life stability, and modes of degradation.
- A lead initiative of flavour and product development by leveraging data science and AI. Apply statistical analysis and chemometrics software to link analytical data to sensory descriptors (experience using PCA, HCA, and non-targeted flavonoids approaches)
- Conduct analytical tests on raw materials, final products, and customers samples concerning previously known flavouring, their presence, storage, degradation, etc and recording and maintaining this in the database
- Evaluating the nutritional value, colour, flavour and texture of food as per the operating procedures.
- Testing food samples for particular types of moulds, yeast and bacteria that may be harmful
- Conduct specialists’ discussions and provide support in the development and implementation of new analytical methods and regulations, taking the latest scientific findings into account.
- Ensuring that food manufacturing processes conform with government, processing consumer and industry standards
- Develop and Improve Food & Beverages by providing solutions for flavour and product development needs for the company.
- Ensure food quality standards are according to FSSAI, EU and FDA regulations.
- Lead cross-functional teams within the organization to accomplish business-critical initiatives
- Coordinate with technicians, scientists and experts to complete work efficiently and within a time frame.
- Collaborate with key internal and external stakeholders to deliver projects according to established timelines and budgets.
- Communicating project updates and information to leadership and contributing to building flavour knowledge and capability for the R&D organization.

- Ensure that analysis results are provided in the best way possible and possible recommended actions are derived and deal independently with complex issues.
- Implement guidelines and structures for documenting and managing the results of analyses in SAP.
- Implement in-house and statutory specifications and guidelines on hygiene, HACCP, food safety, occupational safety and environmental protection, ensuring that these are implemented in subordinate organizational units.
Required Qualification: (2- 4) Years of relevant Experience in flavour research and /or analyses in the food and beverage industry. Experience in compound isolation and identification, HPLC-MS, GC-MS, GC-FID, and GC-O, and various extraction technique (e.g., distillation, column chromatography). Knowledge of flavour stability and experience in product and ingredient testing, analytical flavour analysis, and data science.

Job Purpose:
As a Subject Matter Expert, your primary role will be to research and extract flavour and improve existing products and technologies. In addition, you will be analysing and improving the microbiological, physical, and chemical properties of the food, nutraceuticals, supplements and herbals to make sure they are safe for consumers according to the policies of the European Union Regulations and the Food and Drug Administration (FDA) and the United States Department of Agriculture (USDA) regulations been set.
Work Schedule:
Monday – Saturday (except second Saturday)
Skills Required:
- Experience in the latest techniques for analysing complex flavour materials
- Knowledge and experience in artificial intelligence within the food and beverage category
- Must have strong fundamental understanding of aroma and taste bearing molecules (synthetic / natural) to assist in research related to creation, development, and evaluation of fragrances and flavours.
- Thorough knowledge on the chemistry of essential oils, aroma chemicals etc., their interaction with food and personal care matrices and their ability to impact human sensory.
- Must be able to create fragrances and flavours using advanced methods. Ability to assess and take risks, deal with ambiguity & unknowns, provide a plan to convert unknowns into known and bringing in agility and purposeful innovations
- Knowledge of a range of sciences and their applications to food
- Good business, IT, analytical and numerical abilities
