We develop organic or conventional based on the client's specifications and physiology. We manipulate food texture, aeration, homogeneity, lubricity, viscosity and structure to control the appetite (e.g., hunger, fullness, desire to eat, thirst, prospective food consumption), food intake and gut peptides (ghrelin, GLP-1, PYY, CCK) mainly focusing on the intrinsic aspects of eating such as the chewing, eating rate and oral processing. For instance, we change the texture of the food by altering its viscosity by using different fibres to thicken, such as alginate, locust bean gum, guar gum, inulin, and waxy wheat flour.
We source both plant and animal-based ingredients to formulate food and nutraceutical products with high-quality protein. For instance, we develop tandoori and pita bread supplemented with inulin, guar gum and waxy wheat flour, and egg protein in the formulation. We use safe, inexpensive and proven ingredients from natural sources that would benefit the satiety components.
