Assignment: The client required spicy seasoned veg pickle with the traditional taste of south India.
This case study focuses on the following:
- Formulation of the vegetable pickle that has good sensory properties.
- To have an authentic south Indian taste with enhancement in shelf life.
Challenges:
- During the preparation of the pickles, maintaining temperature and an air-tight environment is mandatory to keep the pickle free from microbial contamination.
- The shelf-life duration might be shortened once the pickle is opened.
