Extended shelf life Smoothie for Health-conscious population.
Assignment: Formulation of fruit smoothie that has the microbiological shelf life
Solution: As per the client request, our food technologists at Food research lab formulated a smoothie-type beverage prepared from juiced fresh fruits. Our team has ensured product uniform by choosing fruit from the same importer and origin. With various processing methods/ treatments, the smoothie was evaluated for its shelf life for selected quality parameters such as conductivity, pH, viscosity, soluble solids, colour before and after processing. Finally, improved microbiological shelf life was achieved for 28 days approximately.
