The Challenge
Protein-rich, gluten-free pasta
Assignment: Development of pasta using functional ingredients like millet, whey, egg, legume flour and other ingredients.
Pasta is an Italian-style extruded food, and Spaghetti and Lasagna are a few examples. Generally, Durum wheat, the hardest wheat, is used to make pasta.
Solution: Our team formulated pasta by adding functional ingredients such as antioxidants, natural pigments, high biological value protein and dietary fibre to have it in a different colour. The client appreciated our product.
