What does Our client require?   

 Assignment:

The client required the formulation of a Perry drink from fruits. Perry is a light and fruity sparkling alcoholic beverage.

This case study focuses on the following: 

  • This study aims to develop Perry’s drink as per the client’s requirement.
  • Formulation of Perry with good sensory properties.

What did we do?   

Challenges 

  • The Perry should be formulated from natural ingredients.
  • The most challenging part is to prevent over-fermentation. Over-fermentation gives rise to an unpleasant taste and flavor to the product.

Solution 

  • The Perry beverage was formulated in a temperature-controlled environment to ensure fermentation. However, it was stored at an ambient temperature to prevent over-fermentation.
  • Every batch of fruits that were harvested/purchased was tested for their sensory properties to ensure consistency in the product’s taste and flavor.
