What Our client required?

Assignment:

The client required a plant based protein powder that contains no artificial flavours.

This case study focuses on the following:

  • This study aims to develop an organic protein powder with natural ingredients and
  • The formulation of protein powder with natural flavours for good sensory properties.

Challenges:

  • The protein powder should contain plant based ingredients and no artificial flavours yet have an excellent sensory profile.
  • Getting the smooth texture and solubility is the challenging part of the processing—the change in texture results in a gritty mouthfeel.

What did we do?

Solution:

  • Based on different trials, the product was optimized regarding nutritional content and natural flavours were added.
  • To overcome the gritty mouthfeel, size reduction of the plant extracts was done, and they were roasted for a few minutes. Size reduction results in a smooth texture and greater dispersion of the protein powder, and roasting helps to improve the mouthfeel.
