What Our client required?
Assignment: Formulation of natural energy drink where the caffeine is derived from herbal extracts and optimising the sensory and processing parameters. This case study focuses on the following:
- Formulation of energy drink – This was formulated so that the caffeine is sourced from the herbal extracts added and not from synthetic sources.
- Taste – Natural energy drinks tend to have a bland taste. The product should not have a herbal taste but be sweet.
- Packaging material – Packaging that can withstand high pressure should be used.
- Sweetness – Stevia added to the product should not contribute to a bitter aftertaste.
What did we do?
Challenges
- Formulation of energy drink – Natural caffeine sources must be selected for formulating the energy drink.
- Taste – The ingredients gave rise to a bitter herbal taste. Stevia added to sweeten the product left a bitter aftertaste.
- Packaging material – The packaging material should withstand high pressure resulting from carbonation.
