Assignment: The client required a low–calorie gummy with no added sugar and fruit flavour.
This case study focuses on the following:
- This study aims to develop gummies as per the nutritional aspect of low-calorie intake with no added sugar.
- The study aims to formulate gummies with fruit flavours and good sensory properties.
Challenges:
- Formulating gummies that are low in calories with no added sugar and chewy texture.
- The most challenging part was the flavour addition and drying of the gummies, and during the drying period, the gummies lacked any flavour.
