What Our client required?   

 Assignment:  The client wanted the formulation of green juice with ingredients regarded as a superfood.

This case study focuses on the following: 

  • This study aims to develop cold-pressed juice per the client’s requirements and
  • The formulation of the green juice with good sensory properties.

What did we do?   

Challenges 

  • Leafy vegetables were used for its formulation. The vegetables have a rather bland taste.
  • The product should have a shelf life of at least one month, which is the most challenging part.

Solution 

  • Fruits with a sweeter taste were added to different types of leafy vegetables to improve the product’s taste and flavour.
  • Natural preservatives were added to increase the shelf life of the product since heat cannot be used for this formulation.

  • The product was formulated using natural ingredients using locally sourced fruits and vegetables and has good sensory properties.
  • The product was evaluated for sensory profile and shelf life.
