Assignment: The client required a multi grain creamy banana porridge that is gluten free and contains no artificial sweeteners or flavours.
This case study focuses on the following:
- This study aims to develop a multigrain porridge with added vitamins and minerals without artificial sweeteners.
- The formulated porridge should have a natural banana flavour for good sensory characteristics.

- The product should be gluten free with no artificial sweeteners or added sugar.
- The most challenging part was the extrusion of the product; that is, the product should be extruded and tempered properly to get the desired texture of the final product.
