What Our client required?   

 Assignment: The client required cold brew vegan coffee with no added sugar, artificial colour, and preservatives. 

This case study focuses on the following: 

  • Formulation of a cold brew coffee that is vegan with no added sugar. 
  • The product should be formulated with natural flavours and no added preservatives. 

What did we do?   

Challenges 

  • The cold brew coffee should be vegan with natural ingredients and no added sugar.  
  • The most challenging part is extracting the coffee; the grounded coffee should be properly extracted for the natural flavour.

Solution 

  • Based on different trials, the product was optimised for getting the natural flavour and sweetness, which was done by varying the concentration of coffee and optimising the sensory aspect. 
  • For the extraction, the grounded coffee was soaked in water for a stipulated time to get all the desired flavour compounds. The natural coffee flavour was obtained by increasing the extraction time.
