This case study focuses on the following:
- Formulation of the Coconut Chutney mix with good sensory properties
- Enhancement of shelf life with no added preservatives.
Challenges:
- Formulating coconut chutney with a pleasant aroma with natural ingredients and spices.
- The most challenging part in formulating coconut chutney is undesirable flavour changes due to the oxidative rancidity of oil in coconut.
