The client required chunks buri rich in antioxidant and made using natural ingredients

This case study focuses on the following: 

  • The formulation developed involves Chunks buri with Sprouted horse gram dhal and spices
  • Formulation with natural flavor for good sensory properties.

What did we do?

Challenges:

  • The product’s sensory characteristics were based on the color and texture of the product.
  • The moringa gives a bitter taste, and that needs to be optimized
  • The drying of chunks of buri reduces the antioxidant property, but it also affects the taste

What I did Today

Solution:

  • Based on different trials, the taste is optimized by varying the moringa powder.
  • The color of the product is optimized by adding turmeric powder to the product.
  • For the proper drying of chunks of buri, the water should be optimized, and the quantity of dhal and other ingredients should be optimized.
