Today’s Task
Event: I decided to formulate whey protein shots today.
How I felt it (initially before executing the actual task):I find the prospect of new and innovative product development exciting.
Actual Task: Product formulation
Whey protein shot is a blend of whey protein isolate, sweetener (sucralose), flavours (fruity), and stabiliser, pectin. Whey protein beverages are demanded by consumers owing to their health benefits, and those with a fruity flavour and no added sugar are demanded even more. The primary considerations during formulation were mixing the dry ingredients with water, hydration and pasteurisation. Mixing ingredients to obtain a beverage consistency with a lesser viscosity was challenging. Another challenge was formulating high-protein shots and optimising them for an extended shelf life without losing flavour and taste. Once the ingredients were collected, the shots were formulated to obtain the desired colour, flavour, taste and texture. Then it‘s stored at ambient temperature for shelf life analysis.

The product has come out well after conducting extensive lab trials. However, we would like to do further trials to study more about improving the product’s stability.
I should have carried out a better formulation as a next step with improvement in the product’s shelf life.
