Pineapple Fruit Drink   

Event: I planned to formulate a pineapple fruit drink today.

How I felt it (initially before implementing the task): I always love to formulate innovative products.

What did I learn?

Pineapple fruit drink combines pineapple juice concentrate and reconstituted puree with natural antioxidants and stabilisers. Fruit drinks have long been popular around the world. Since there is a huge market for pineapple fruit drinks, there has been a lot of invention and research into formulating these products and process optimisation. Factors to consider while developing a pineapple fruit drink include fruit pulping, evaporation, homogenisation, and pasteurisation. One of the most challenging steps in developing a fruit drink with real fruit with no added sugar is the pulping process of the fruit to produce the juice concentrate. Formulating a fruit drink and optimising it to be stable for a longer shelf life with no loss of flavour and taste. Once all the ingredients were collected, the drink was formulated using pineapple juice concentrate, diced pineapple, antioxidants, and stabilisers based on colour, taste, flavour, and consistency. The product is then stored at room temperature for shelf-life analysis.

Outcome :

A ready to drink pineapple fruit drink with excellent sensory characteristics was formulated at the Food Research Lab.

What went well?

The product was formulated after numerous lab trials and turned out very well. However, we would like to conduct further trials to study improving the product’s stability.

What Could I have done better?

I should have carried out a better formulation as a next step with improvement in the shelf life of the product.
