Event: I decided to work on formulating orange fruit juice today.
How I felt it (initially before executing the actual task): I find new product formulation exciting.

What did I learn?
Orange fruit juice is a blend of orange juice concentrate reconstituted from orange pulp, antioxidants and stabilisers. Fruit juice is relished worldwide for its nutritional benefits. Since orange fruit juice is considered the king of the global fruit juice market, there have been various innovations in the formulation and processing parameters. Evaporation, homogenisation and pasteurisation are the three main components for formulating orange juice. The most challenging part while formulating orange juice with real fruit extracts and no added sugar is extracting the juice and preparing the concentrate. The orange juice formulation commenced once all the ingredients were collected, which included orange juice concentrate, orange sacs, stabilisers and antioxidants. The juice was then stored for shelf life analysis.

Outcome: A ready to drink orange juice with natural ingredients and excellent sensory characteristics was formulated at the Food Research lab.

What went well? Since the orange fruit juice was formulated after several rials, it turned out well. We want to conduct further studies on improving product stability.
What Could I have done better? I should have carried out a better formulation as a next step with improvement in the shelf life of the product.
