Event: Today, I decided to work on the formulation of Marinade
How I felt it (initially before executing the actual task): I love to handle projects that deal with developing innovative food products.

What did I learn?
Grilled food products are considered a delicacy in all cuisines, with each cuisine having its type of speciality marinated food. Food products cooked by grilling have a rich taste and flavour, which comes from the marination of meat or vegetables. This project focuses on formulating a marinade that is used for marinating meat or vegetables. The product was developed using natural ingredients with more than ten spices and spice extracts. The most challenging part was balancing the spices. After procurement of all ingredients, the marinade is formulated without preservatives. Once the formulation is done, the product is kept for shelf life study, and the product is also subjected to application testing.

Outcome:
A ready to eat dark chocolate with organic ingredients and good sensory properties was formulated at the Food Research Lab.

What went well?
The product had excellent sensory properties since it was formulated after extensive lab trials. However, we would like to carry out more trials to improve the stability of the product.
What could I have done better?
A better formulation could have been carried out, with improvements in the product’s shelf life.
