Event: Today, I had the plan to work on Choco dip chips
How I felt it (initial before executing the actual task): I was enthusiastic about developing a new product.
Actual Task: Product formulation
The Choco dip chips are a blend of corn flour chips (tortilla chips) coated with dark compound chocolate, which is in high demand. Three things were considered when preparing the product, i.e. Chips’ crispiness, chocolate coating and the taste of chips. The most challenging part of the chips was to create a chocolate coating on chips. The next element is one of the most important chocolate melting, sweetness, bitterness and crispiness. Once all the ingredients were ready, chips were made. Next, corn flour was used to prepare chips according to their colour, taste, flavour and crispiness. The chips were coated with dark compound chocolate and then with sweetened(stevia) cocoa powder to prevent the chocolate from melting. Since it was sweetened cocoa powder, Choco dip chips were stable at room temperature and then stored at ambient temperature for shelf life analysis.

The chips developed in the Food Research Lab were crispy and had good sensorial properties.

The product turned out well since it was developed after the lab trials.
