Actual Task: Product development
The cola–flavoured bottle-shaped gummy is one of the best-tasting candies with a gummy texture. It’s a blend of soluble corn fibre, Allulose, Modified potato starch, acidulant–citric acid, and Natural sweetener stevia. Stevia-sweetened and gelatin-free products are in high demand since stevia is an excellent sugar replacer, and an increasing number of consumers prefer vegan products. Optimizing a firm and chewy texture is one of the most challenging parts of the gummy formulation. The gummy texture was achieved by optimizing starch gelatinization and the cooking temperature. The other challenging part of formulating these gummies was to bring out the geniune cola flavour with a touch of citrus. The process of formulating gummies began once all the ingredients were collected. The gummies were then stored at an ambient temperature for shelf-life analysis.

A bottle-shaped, cola and citrus-flavoured low–calorie gummy was formulated at the Food Research Lab.

The product formulated had an excellent taste and flavour since it was developed after extensive lab trials. However, further trials can be carried out to improve the product’s texture.
A better formulation with an improved texture could have been done.
