Fruited Buttermilk (sour cherry, elderberry, grape, plum, acerola) is one of the popular bases for dairy beverages. This is due to the diacetyl characterizing the flavour of butter. Aerated chocolate milk, with cereal pieces, yoghurt drink with fibre, green tea flavoured milk, savoury quark drink – liquid cheese beverages. For instance, acidified dairy drinks are one of the popular categories. We use pectin as protein stabilization powder which offers a lighter, more refreshing mouthfeel with beneficial sensory characteristics in acidified dairy drinks.
